The autumn term is upon us and we’re excited to be back at school for the new school year!

This time of year has so much produce coming into season, so we’ve put together our third instalment of healthy packed lunch ideas for your little ones to take to school this term.

The focus, as always, is on balanced, easy-to-prepare, low-processed meals that toddlers will actually want to eat!
Let's dive in!

Spinach and cheese omelette with pita bread fingers and strawberries

Packed Lunch Idea: Spinach and cheese omelette with pitta bread fingers and strawberries

Omelettes are (in our opinion) the fastest, healthiest lunch you can make in a frying pan! Top tip: make double the portion so you can have some for your breakfast as well.

Ingredients:

2 eggs

Spinach

Grated cheese

Instructions:

Whisk together the two eggs and add to a hot pan with some oil. When the underside is cooked, add the spinach and cheese for a minute or two or until melted. Fold the egg in half over the toppings and cook until all the egg is cooked through. Chop in to triangles and it's ready to go!

Sides:

Low salt pita bread

Strawberries

Chicken, tomato and chickpea couscous salad with cheese fingers and raspberries

This quick cous cous salad is easy to prepare and is the perfect balanced lunch for your little one. The cheese fingers add an extra calcium boost on the side which rarely get left behind!

Ingredients:
Cooked chicken (if opting for supermarket cooked chicken, the M&S branded one is the best one we've found with the least preservatives and salt!)
Cherry tomatoes
Chickpeas
Couscous
(Optional) A few sprigs of parsley

Sides
Cheddar cheese
Raspberries

Salmon pasta salad with pear and pepper fingers

Pasta salads are great served chilled this time of year and the great thing about this recipe is that it's filled with brain boosting tinned Salmon and easy-to-prepare veggies!
Ingredients:

Cooked pasta (any shape!)
Peas
Sweetcorn
Tinned salmon
Yoghurt (about a tablespoon)
Mayonnaise ( a teaspoon)
